Finland roll? Nakki Sushi

“Makkara”, “Nakki” are sausages in Finland. What is the common food in Finland? I always say “Makkara sausage” (Please correct me if wrong 🙂 ).
This is very common, and mandatory to bring when we go to picnic by forest hiking in Summer, by skiing in winter. always with this Makkara sausage.

One of the theme of this “Solailo.” project is “Finland x Japan Inspiration”. Then one answer is “Makkara x Sushi”, here it is.
But this recipe, this is not a challenged recipe even in Japan, in Sushi home country. This recipe is quoted from common recipe website of Japan, good for children menu, for example the lunch box in picnic. Very safety and also fresh feeling even for Japanese as western Sushi. 🙂


All you can get these ingredients in Finnish super maket (K-market, Prisma etc) but the Sushi rice vinegar and Nori (Seaweed sheet), you can get better products at the Asian shop Makukellari.

– Sushi Rice (made by Sushi vinegar)
– Seaweed sheet (Nori)
– Sausage (Nakki, Makkara)
– Salad leaf (Salaatti)
– Carrot (Porkkana)
– Cream cheese (Tuorejuusto)


1. Cut Carrot and boil

Cut the carrot into the long pieces, almost same size of the sausage.
Boil the carrots until becomes soft.

2. Fry sausage

Fry Nakki sausage, very simple.
In case of using Makkara (bigger sausage), cut to small pieces for easy rolling later.

3. Roll

Lay a nori (seaweed) sheet on the Sushi mat, shiny-side down.
Pat handfuls of rice on top in thin layer, leaving the furthest edge from you clear. (the thickness of the rice is needed to control depending on the ingredients volumes)
Put the salad leaves, sausages and carrots, and then cream cheese topping (much volume is better)
Lift the edge of the mat over the rice, applying a little pressure to keep everything in a tight roll.

4. Cut

Cut the Sushi roll into small pieces.
The knife should be sharpen and clean all the time. Recommend to wipe and clean the knife in every cut. Dirty knife makes dirty Sushi, be careful.

Easy Sushi ball

Sushi ball (Temari-zushi in Japanese), is the easiest Sushi and making it beautiful.
This is one example provided at the restaurant day, using cucumber and cold smoked salmon. Using this technique with different ingredients, you can make it by your own Sushi. Try it!

This Sushi ball, it is made by cling film (tuorekelmu), it is clean and safety for the food. The procedure is very simple, you can enjoy also with kids to make family Sushi at home!


– Sushi Rice
– Cold smoked salmon (Kylmäsavulohi)
– Cucumber (Kurkku)
– Leek (Purjosipli)
– Mayonnaise


1. Cut Salmon and Cucumber

Cut the salmon and cucumbers into small pieces.
Put salts to cucumber to make softer. And then wash by water to remove the salty taste.

2. Make the ball, twist it!

Prepare the sheet of cling film (tuorekelmu),
Put the materials,
Put the Sushi rice,
Wrap and twist it! Making a ball.
Unwrap then done!

3. Put toppings

Put Mayonnaise on top of the ball.
Put the thin sliced Leek (Purjosipli)

Easy! Clean! Delicious!

Restaurant Day – Kiitos! –

Yesterday Restaurant Day, we made more than 300pcs Sushi and completely soldout withing 3 hours. And still many people visited after finished the Sushi rice, I’m really sorry for that.
Thanks to this result, we could provide the big donation for the Oulu International School. This is the first time of Restaurant Day event at the school. There were many variety of foods from all over the world, Indonesia, Singapore, Ukraine, France, etc. Very international feelings and reminds us much, Oulu is the international city!

Addition, this time we sold Sushi  by 1 piece 1 euro, very competitive price. But hey, in common Sushi is expensive food, because of ingredients. This time, the cold smoked salmon (kylmäsavulohi) was provided as sponsor by Hätälä, Oulu local salmon/fish company as their kindness. Big thanks for Hätälä and because of this Oulu’s local salmon, for many Sushi beginners don’t afraid to eat the Sushi and satisfied. It is great thing and I got many responses that people said delicious Sushi. For Sushi, the technique is not important in cooking at home, but all the time the material is really important and always needs the best fresh one. So, please use the best fresh local food for Sushi, if you make Sushi at home.

The menu of Sushi in this time Restaurant Day, I have plan to put the recipes  on this blog, keep checking on further information.

This weekend Saturday, Solailo opens a popup restaurant at OIS, Oulu International school for their donation. All sales is donated for the school development.

For this popup Sushi restaurant, we have a great sponsor – Hätälä, Oulu local salmon/fish company. They provide the cold smoked salmon (kylmäsavulohi) for this event.
